Strawberry, Avocado and Wild Rocket Salad

Back from an afternoon of shopping amongst the crowds and the idea of cooking doesn’t really appeal to me, so a quiet moment at home with a quick and easy salad and favourite comedy series – The Big Bang Theory. I may just have a crush on Dr Sheldon Cooper…  

  1. Chop an avocado, some strawberries and toss through some wild rocket.
  2. Mix balsamic vinegar, a pinch of sugar and a touch of extra virgin olive oil.
  3. Add the dressing to the salad and enjoy!

Simple, healthy and delicious – the bittersweet rocket with the sweet strawberries and creamy avocado work so well together.

    Strawberries and avocado – two of my favourite foods together with rocket – definitely one to try – quick too, always a bonus!

    Mum gave me a recipe for a spinach and strawberry salad that I bring to every pot luck and it’s always a MASSIVE hit! So delicious, fresh and healthy! I’ll make mine for you and you can do yours for me and we’ll compare :) I can do this now as I just bought a whole tray of strawberry punnets (only $7-who could resist?!) so I have tons of strawberries at the moment.
